1. Chicken and Vegetables with Curry Spices Baked in the Oven

It’s a tasty and nutritious option for normal dinners as well as special occasions because it has a good ratio of protein and vegetables.

  • Ingredients:
    • Curry Spice Rub:
      • 3 tablespoons Curry Powder
      • 2 tablespoons Paprika
      • 2 teaspoons Chili Powder (adjust for spice preference)
      • 2 teaspoons Onion Powder
      • 2 teaspoons Garlic Powder
      • 1 teaspoon Ginger
      • 1-2 teaspoons Black Pepper
      • 1 teaspoon Salt
    • Chicken:
      • 1 whole chicken, quartered
      • Olive oil
    • Vegetables:
      • 2 yellow zucchini squash, thickly sliced
      • 2-3 cups Brussels sprouts, halved
      • 1 bunch petite whole carrots, peeled
      • 2-3 tablespoons olive oil
      • Cilantro for garnish
  • Method:
    1. Turn the oven on to 204.4°C. Mix every component of the curry spice rub.
    2. A part should be reserved for veggies. For chicken, use the bigger quantity.
    3. Putting the chicken on a baking sheet, covering it with the spice rub and brushing it with olive oil.
    4. Bake the chicken for twenty minutes.
    5. Combine the veggies with the spice rub that was set aside, arrange them on the pan, and bake for a further 25 to 30 minutes.
    6. Make sure the chicken achieves a temperature between 71.1 and 73.8°C. Add cilantro as a garnish and serve.
