We used the chasseur Round French oven to make sure our soup was cooked to perfection. This gorgeous french ovens was made of cast iron for maximum heat retention and even heating, which made it the perfect vessel to serve our wonderful soup in and keep it warm for a long time.

Minestrone Soup With Tortellini

Recipe for Minestrone Soup with Tortellini


  • 2 tablespoons olive oil
  • 1 medium brown onion, diced
  • 3 cloves garlic, diced
  • 1 tbsp dried Italian herbs
  • 2 carrots, diced
  • 4 stalks celery, diced
  • 1 zucchini diced
  • 3-4 bay leaves
  • 1/4 cup tomato paste
  • 1 x 400g can of diced tomatoes
  • 1 cup water
  • 4 cups of chicken or vegetable stock
  • 1 x 400 grams Can beans (Cannellini beans, Four Bean Mix, Red Kidney Beans, or Chickpeas)
  • 1 cup frozen broccoli, chopped
  • 1/2 cup frozen green beans, chopped
  • 1 x 325 grams packet tortellini
  • 1/2 cup parsley, chopped
  • To taste, add salt and pepper.


  1. In a large stockpot, warm the oil over medium-high heat.
  2. Add the onion and cook it for three minutes. Stir the dry herbs and garlic for two minutes.
  3. After adding the celery and zucchini, sauté for a further five minutes, stirring now and again. Incorporate the bay leaves.
  4. Stir for five minutes after adding the tomato paste, tomatoes, water, and stock. Include the canned beans. Simmer the mixture for a while. To blend the flavors, lower the heat to low, cover, and simmer for ten minutes.
  5. Take off the top, add the broccoli, green beans, and tortellini, and cook, stirring regularly, for 5 to 8 minutes, making sure the tortellini is completely submerged in the liquid. Add the parsley, chopped, and season thoroughly..
  6. Accompany with butter and crusty bread.
