Recipe for Vegan Bolognese
Serving Size: 2 | Prep Time: 30 minutes
Ingredients:
- 400g can chopped tomatoes
- 1 regular-sized mushroom, roughly chopped
- 400g can legumes/pulses
- 1 turnip, roughly chopped
- A single carrot, chopped
- 150g pasta without gluten
- A single chopped onion
- One sliced garlic clove
- One tablespoon of oil
- ½ teaspoon of salt
- ½ teaspoon of black pepper
- ½ teaspoon dried oregano
- ¼ teaspoon dried basil
Method:
- In a saucepan set over medium heat, add oil. Add the onion and cook until it becomes soft and transparent once it's warm. After two to three minutes, add the garlic and stir for a further two minutes.
- Stir everything until coated after adding the spice. Before adding the mushrooms and legumes, add the carrot and turnip and simmer for a further two to three minutes while stirring. After the vegetables have shrunk in size, mix and cook for three minutes. Then, add the tomatoes and stir again. Reduce heat and simmer for 20 minutes after cooking over medium heat for 4–5 minutes, or until sauce begins to bubble lightly.
- Meanwhile, fill another saucepans with around 300ml of water and bring to a boil. To avoid spilling, add the spaghetti and stir from time to time while adjusting the heat. Cook pasta as directed on the package.
- When the pasta is cooked, transfer a portion to a dish or bowl, pour a substantial amount of Bolognese sauce over it, sprinkle some chopped herbs on top, and savor the delicious tastes!
